One of the best restaurants we’ve been to on our visit to Guadalajara and that’s saying something.

An ode to corn, a tribute to Jalisco, and a celebration of traditional Mexican cuisine, featuring REAL techniques from our ancestors and preparations that are intended to be revived from centuries ago. The entrance is a very pretty place, decorated with hints of the Jalisco tradition. The kitchen is fully visible to diners, allowing them to see how the food is prepared. Obviously, palates atrophied from eating so much junk food wouldn't be able to appreciate the subtle nuances of the flavors and techniques of yesteryear in authentic Jalisco-style Mexican food. We ordered Cutzalan enchiladas with pumpkin seed sauce, mole sauce, and peanut mole sauce. Each one had a very unique flavor; of the three, the peanut sauce was my favorite. We also ordered the Pachola package, which includes a cactus salad (small portion), tomato soup with dough balls, creamy and delicious. The Pacholas, which were what I was most looking forward to, were a bit overcooked for my taste, but the flavor was very good. They come with LEY's red sauce, which should go with the Pacholas. Finally, we ordered a Lugo cajeta jelly, which is meant to be shared but is delicious, creamy, and nutty. The Pacholas were freshly made on a metate that easily weighs 100 kg, in full view of the diners. We ordered a traditional tejuino, without the lemon ice cream, and with the pure tejuino flavor that many people find overwhelming. It perfectly accompanied the food. The bill was quite reasonable for the number of dishes, so we left rolling. In short, a place we in Jalisco should be proud of and that visitors should visit.
